Puréed carrot is a great alternative to mashed potato, bringing a vibrant splash of colour and a unique flavour to your cooking. It’s also loaded with a bunch of great antioxidants, making it a great addition to family meals.
Place the carrots into a medium-sized saucepan, cover them with water, bring the saucepan to the boil, and then simmer the carrots for 15–20 minutes (or until very tender, but not falling apart).
Remove the saucepan from the heat. Drain the carrots using a colander.
Mash the carrots with a masher, or blend on high speed in a blender for three minutes until the carrots are smooth.
In a separate bowl, add the AdVital Powder and cream, and mix them together with a wooden spoon to make a paste.
Add the paste to the carrot purée, and mash or blend them together.
Season with salt and pepper to taste.
