PURÉED CARROTS

Puréed carrot is a great alternative to mashed potato, bringing a vibrant splash of colour and a unique flavour to your cooking.  It’s also loaded with a bunch of great antioxidants, making it a great addition to family meals.

Ingredients

  • 400 g carrots, peeled and chopped
  • 50 g thickened cream
  • 2 scoops AdVital Powder, 50 g
  • Salt and pepper, to taste

Instructions
 

  • Place the carrots into a medium-sized saucepan, cover them with water, bring the saucepan to the boil, and then simmer the carrots for 15–20 minutes (or until very tender, but not falling apart).
  • Remove the saucepan from the heat. Drain the carrots using a colander.
  • Mash the carrots with a masher, or blend on high speed in a blender for three minutes until the carrots are smooth.
  • In a separate bowl, add the AdVital Powder and cream, and mix them together with a wooden spoon to make a paste.
  • Add the paste to the carrot purée, and mash or blend them together.
  • Season with salt and pepper to taste.
