Bacon & Zucchini Frittata
It’s the healthy snack that the whole family will love! Zucchini always tastes better when it’s mashed, fried and crammed into a delicious frittata with a generous helping of bacon.

- 8 eggs
- 250 g milk
- 6 scoops AdVital Powder, 150 g
- 200 g rasher bacon
- 1 large brown onion
- 1 zucchini
- 1 spring onion
- 20 g parsley , chopped
- 50 g parmesan cheese
- Salt and pepper, to taste

Directions
- Preheat the oven to 180°C, and line a baking tray with parchment paper on the base and sides.
- Chop the bacon, onion and zucchini, fry them together in a little olive oil, and then set them aside.
- In a large bowl, whisk the eggs, cream, salt, pepper, parsley, cheese and AdVital Powder.
- Add in the cooked bacon mixture and the chopped spring onion.
- Pour the mixture into prepared baking dish and bake it for 20–25 minutes (or until a skewer speared through the middle of the dish comes out clean).
- Allow the dish to cool for 10 minutes before portioning.
