Bacon & Zucchini Frittata
It’s the healthy snack that the whole family will love! Zucchini always tastes better when it’s mashed, fried and crammed into a delicious frittata with a generous helping of bacon.
Directions Preheat the oven to 180°C, and line a baking tray with parchment paper on the base and sides.
Chop the bacon, onion and zucchini, fry them together in a little olive oil, and then set them aside.
In a large bowl, whisk the eggs, cream, salt, pepper, parsley, cheese and AdVital Powder.
Add in the cooked bacon mixture and the chopped spring onion.
Pour the mixture into prepared baking dish and bake it for 20–25 minutes (or until a skewer speared through the middle of the dish comes out clean).
Allow the dish to cool for 10 minutes before portioning.
