Equipment

  • 1 Baking Tray
  • 1 Food Processor
  • 1 Grater
  • 1 Mixing Bowl
  • 1 Knife & Chopping Board
  • 1 Frying Pan

Ingredients

  • 250 g Sliced Mushrooms
  • 400 g Drained Chickpeas
  • 2 tbsp Olive Oil
  • 1 Large Grated Carrot
  • 1 Medium Grated Zucchini
  • 80 g Cashews
  • 55 g Breadcrumbs (1/2 Cup)
  • 50-75 g Grated Parmesan (3/4 Cup)
  • 1 Large Egg
  • 2-3 Minced Garlic Cloves
  • 3/4 tsp Sweet Hungarian Paprika
  • Salt & Pepper (To Taste)
  • 200 g Cooked Ancient Grain Mix (1 Cup)
  • 1 Cup Chooped Spring Onion
  • 50 g AdVital Neutral Powder (2-Scoops)

Instructions
 

Preheat Oven

  • Set the oven to 160°C fan-forced. (15-20mins)

Prepare Veggies and Beans:

  • Toss mushrooms in oil and spread them onto a baking tray.
  • Spread beans on the tray and sprinkle zucchini and carrots on top.
  • Bake for 15 minutes.

Check Mushrooms

  • If the mushrooms aren't wrinkled and dry, cook for another 10 minutes.

Check Veggie and Bean Mix:

  • The surface of the beans should be dried or splitting, and the carrots should be golden in parts.
  • Move the dried parts to the center of the tray and place the moister parts on the edges.
  • Bake for another 10 minutes.

Remove from Oven and Cool Slightly.

    Process Cashews:

    • Place cashews in a food processor and blend until they are the size of breadcrumbs.

    Process Veggie and Bean Mix:

    • Add the bean mix and mushrooms to the food processor.
    • Process until the mixture is the size of large breadcrumbs.

    Add Remaining Ingredients:

    • If the mixture is sticky, add more breadcrumbs.
    • If it’s too dry or crumbly, return to the food processor and blend until the texture is correct.

    Shape Patties:

    • Shape the mixture into 6–8 patties. Refrigerate for at least 1 hour.

    Cook Patties:

    • Heat olive oil in a pan on high heat. Cook the patties for around 4 minutes per side until golden and crispy.

    Serve or Store:

    • Serve immediately, or refrigerate for up to 24 hours. Alternatively, wrap securely and freeze for later use.
