Ingredients
- 250 g Sliced Mushrooms
- 400 g Drained Chickpeas
- 2 tbsp Olive Oil
- 1 Large Grated Carrot
- 1 Medium Grated Zucchini
- 80 g Cashews
- 55 g Breadcrumbs (1/2 Cup)
- 50-75 g Grated Parmesan (3/4 Cup)
- 1 Large Egg
- 2-3 Minced Garlic Cloves
- 3/4 tsp Sweet Hungarian Paprika
- Salt & Pepper (To Taste)
- 200 g Cooked Ancient Grain Mix (1 Cup)
- 1 Cup Chooped Spring Onion
- 25-50 g AdVital Neutral Powder (2-Scoops)
Instructions
Pre-Heat Oven 160c Fan Forced (15-20mins)
- Toss mushrooms in oil and spread onto a baking tray.
- Spread beans on a baking tray and sprinkle zucchini and carrots on top.
- Bake for 15 minutes.
- Check mushrooms, if not wrinkled and dry cook for another 10 minutes.
- Check veggie and bean mix. Surface of beans shouldbe dried/splitting, carrots becoming golden in parts. Move the dried parts to the centre of thetray and more moist to edges and cook for another 10 minutes.
- Removefrom oven, cool slightly.
- Placecashews in food processor and blend to size of breadcrumbs.
- Add bean mix and mushrooms. Process until large breadcrumb size.
- Add breadcrumbs, parmesan, garlic, paprika, salt, pepper, onions and AdVitalprocess until it combines like slightly lumpy beef patties.
- Removefrom food processor and stir in rice, if mixture is sticky add more breadcrumbs, if too dry and crumbly, return to food processor and blend until texture is correct.
- Shape into 6 – 8 patties and refrigerate for at least 1 hour.
Serving & Cooking Instructions
- Cook patties cold in olive oil on high heat. Around 4 minutes per side.
- Serveor refrigerate for up to 24 hours or wrap securely and freeze.
