Oven-Roasted Mashed Potato
Mashed potato might be a staple of Western cuisine, but getting that smooth, creamy mash perfect is still a bit of an art. Use our recipe to easily make this protein-rich side.

Roasted Potato Mash Preheat an oven to 200°C.
Place the potatoes on a sheet tray and bake at 200°C for 1.5 hours (or until tender –a knife should go through them easily).
Remove the potatoes from the oven. Let them cool them for 20 minutes.
Heat the butter and milk in a saucepan over a low heat until the butter melts.
Remove the skin from baked potatoes. Add the potatoes to warm milk and butter in a large heatproof bowl. Mash or whisk the mixture until it is smooth.
Season the mashed potatoes with salt and pepper to taste.
Tips and Hints:
For a smoother finish, pass the baked potato through a ricer. Mashed Potato Peel and cut the potatoes into large chunks. Cook them in boiling water for 15–20minutes (or until tender).
Mix the AdVital Powder with milk until the resulting mixture is smooth (mix for about 30seconds) and then set it aside.
Drain the potatoes well. Stand them for 10 minutes to ensure that all remaining water evaporates.
Add the butter, and roughly mash the potatoes with a masher. Add the fortified milk mixture, and beat the resulting mixture until it becomes fluffy.
Season to taste and serve.
Potato Croquettes Form the mash into 12 cork-shaped croquettes.
Roll the croquettes in flour or AdVital Powder, beaten egg, dried breadcrumbs, and then roll them in egg and breadcrumbs again.
Press the crumbs on firmly.
Deep-fry the croquettes for 3–5minutes.
Drain away the excess oil and serve them.
Hints and Tips:
For a creamy mash, add 1 tablespoon of cream cheese.
Garnish the mashed potato with finely chopped parsley.
For a gourmet mash, add 100 grams of blue cheese when mixing, or crumble the cheese over the potato when serving.
