Need a fast, easy snack that skips the baking part?  You can’t beat a classic hedgehog slice made with rich cocoa – especially when it’s enhanced with AdVital’s neutral-flavoured fortification powder.

Ingredients

  • 250 g roughly crushed Arnott's® Marie biscuits, or, for a gluten free slice, use 400 g roughly crushed Arnott's® Rice Cookies.
  • 3 tbsp desiccated coconut, 20g
  • 3 tbsp cocoa, 30 g
  • 4 scoops AdVital Powder, 100 g
  • 170 g butter
  • 3/4 cup castor sugar, 150 g
  • 1/2 tsp vanilla essence or extract
  • 1 egg, 59 g, beaten

Instructions
 

  • Line a 20cm x 30cm slice tray or shallow dish with baking paper.
  • Roughly crush the biscuits in a bowl until there is a mixture of fine and chunky crumbs.
  • Add the coconut, cocoa, and AdVital Powder.

  • Press the resulting mixture evenly into a lined tin and refrigerate it for45 minutes (or until firm).
  • Once the mixture has set, cut it into 20 portions and serve it up.

Notes

Hints and Tips:
  • Before you slice the mixture, dust it with icing sugar to serve, or ice it with chocolate icing and dust it with desiccated coconut.
  • Serve the slices with ice cream or a berry compote. For extra decadence, grate chocolate over the top.
  • Crumble the slice and sprinkle it over ice cream or sorbet, or use it as a cheesecake or pie base.
  • Add a ½ cup of chopped walnuts in at step 3.
