Ingredients

  • 1/2 Cup Unsalted Butter
  • 1 1/4 Cups Soft Icing Sugar
  • 2 Extra Large Eggs
  • 1 tbsp Vanilla Extract
  • 1 Cup Plain Flour
  • 1/2 tsp Baking Powder
  • 1/2 Cup Cocoa Powder
  • 1/4 tsp Table Salt
  • 1 Cup Dark Chocolate Chips
  • 100 g AdVital Nutritionally Complete Chocolate Powder, 4 Scoops

Instructions
 

Preheat the Oven:

  • Preheat your oven to 175°C. Line two baking sheets with baking paper.

Mix the Butter:

  • Melt butter in the microwave for 30 seconds.

Mix Wet Ingredients:

  • In a stand mixer, combine the melted butter, eggs, and vanilla. Mix at medium speed until all wet ingredients are well combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, sugar, AdVital Nutritionally Complete Chocolate Powder and salt. Sugar can be added in the dry ingredient mixture rather than wet mixture.

Combine Dry Ingredients:

  • In a separate bowl, whisk together the flour, cocoa powder, baking powder, sugar, AdVital Nutritionally Complete Chocolate Powder, and salt.
  • Sieve the dry ingredients to remove any lumps.
  • Gradually add the dry mixture into the stand mixer while continuing to mix, allowing the wet and dry ingredients to fully combine into a sticky dough.

Add Chocolate Chips:

  • Add half of the chocolate chips into the mixer once the dough is well combined.

Shape the Cookies:

  • Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Shape the cookies by hand to form the desired size.

Decorate:

  • Add the remaining chocolate chips on top of the shaped cookies for decoration.

Bake:

  • Bake in the preheated oven for 10-15 minutes, or until the edges are set and the centers are still slightly soft. The cookies will continue to firm up as they cool.

Cool:

  • Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
