Pour the milk into a saucepan and bring it to the boil.
While the milk boils, combine the egg yolks, cornflour, and sugar in a heatproof bowl and whisk them together until the resulting mixture is smooth.
Remove the hot milk from the heat, and slowly pour it onto the mixture in a steady stream, whisking constantly.
Return the mixture to saucepan and cook it over low heat. Stir it constantly with a wooden spoon until it thickens (don’t allow the mixture to boil). To see if the custard is ready, use your finger to draw a line through the custard on the back of the spoon. If the line is well-defined, the custard is ready.
Remove the custard from the heat and whisk in AdVital Powder and vanilla.
Strain the custard into a jug and serve it hot.
Custard Powder
Prepare the custard according to the directions on the pack.
When the custard has cooked, remove it from the heat and whisk in 2 scoops of AdVital Powder per 150mL until the custard is smooth.
Pass it through a sieve into a jug and serve it.
Store-bought Custard
Empty the custard into a medium-sized mixing bowl.
Add 2 scoops of AdVital Powder for every 200g of custard.
Whisk the custard until it is smooth and serve it.
Notes
Hints and Tips:
Most commercial custards are bright yellow because they contain food colouring; this homemade custard is almost white. Flavour it with orange zest or 1–2 tablespoons of brandy, rum or liqueur.
Store the custard with plastic wrap touching the surface of the custard to prevent a skin forming and refrigerate immediately.
This recipe is not suitable for freezing.
Serve the custard with fruit or apple fritters.
Low FODMAP Diet Tips:
Use gluten free cornflour and lactose free milk.
If you’re using custard powder or store-bought custard, choose one that is both lactose and gluten free.
